(2-Hydroxypropyl)-beta-cyclodextrin is cyclic polysaccharide comprised of 7 glucopyranose units. This ingredient appears as a solid and functions as a chelating agent. Cyclodextrins are able to form host-guest complexes with hydrophobic molecules and are used in the production cholesterol free products. Beta-cyclodextrin complexes with certain carotenoid food colorants have been shown to intensify color, increase water solubility and improve light stability.
